It's hard to get kids to eat their veggies. I mean what's the deal? Are veggies not sweet enough, not salty enough, is it that kids know veggies are healthy or are they just colored funny? Well, next time you serve up a piping hot bowl of mac and cheese to your kids, steam (or oven roast) some sweet butternut squash until they are fork tender. Then puree it with a food processor and add it right into the mac and cheese. It won't change the color or the consistency of mac and cheese so our bet is your kids won't know the difference.
For an added bonus, stir in a teaspoon of flax seeds grounds (not the whole seeds) if your child will allow it. It won't change the taste at all.
